Originates in the finest Sangiovese vineyards of the historic Castello di Poppiano estate, on the hills to the south-west of Florence. A characteristic Tuscan grape variety suitable for both traditional grilled meats (sausages, Boston butt, rosticciana-style ribs) and low and slow cooked dishes such as pulled pork and pork ribs. The floral, fruit-forward and simultaneously dry character of Sangiovese meets and balances the fatty notes of pork and enhances its more aromatic and flavoursome components. The clean, elegant and balanced tannin of a great Sangiovese prepares the palate for the second bite and enhances the gastronomic experience of an extremely versatile and variegated meat.

Pairs with: grilled pork, sausages, chops, and slow cooked recipes such as ribs, and pulled pork.

Vinification and ageing: maceration and vinification in steel tanks are followed by 12 months’ ageing in 20-hl oak barrels.
